Today I am sharing a recipe for a healthy breakfast that I have enjoyed sharing with Little. This recipe is adapted from Pinterest that I glanced over, but could not find when I returned to make it. This is what I did. The good news is that this recipe was so easy, I could make it without even looking at my screen.
These wheat-free and dairy-free pancakes are delicious and easy to make, but have a different texture from a normal pancake. Bonus: If you have bananas that are ripe, sweet and a little bit sticky, no syrup is needed! These bananas are great for sharing or to eat yourself.
INGREDIENTS
Bananas ripe
2 large eggs
1/8 tsp Baking Powder
1/8 tsp. cinnamon (I eyeball the amount and add as much as you want to your bowl).
1/4 tsp vanilla
DIRECTIONS
In a large bowl, mash bananas until smooth. Add eggs and other ingredients. Stir until smooth.
Use a spoon to pour the mixture on a hot flat pan that has been sprayed with cooking spray.
Cook each side for 2 1/2 minutes.
